Nuova Simonelli Mythos GX Gravimetric Espresso Grinder

The Mythos GX 85 W is Nuova Simonelli's gravimetric on-demand grinder, built for cafes that pull espresso all day and need every dose to land on target. An internal scale weighs the coffee as it grinds and stops at the weight you programmed, so the dose stays right even as beans settle, humidity shifts or the burrs warm through service. GX stands for Grinding Experience, and this is the gravimetric version of that line.

Weight-based dosing, not timed

Most shop grinders dose by time: you set a number of seconds and hope the output holds steady. The GX 85 W weighs each dose on a built-in load cell and grinds until it reaches the target weight. Baristas stop re-weighing and correcting shot after shot, and less coffee ends up in the knock box.

C-Automation with the Nuova Aurelia

Paired with a C-Automation equipped Nuova Aurelia, the grinder recognizes the portafilter presented to it and grinds the dose tied to that recipe automatically. If it doesn't recognize the portafilter it holds the grind and shows a warning on screen, so a wrong dose doesn't reach the basket. The GX 85 W also works on its own with any espresso machine.
